Hey guys! I had to make something to take into school for carnival, I decided to make cupcakes.. But we didn’t have butter!
So I went onto the page of answers A.K.A Google and searched for butter free cupcakes. I found a recipe that I liked the look of and changed it up a bit:) So I though I would share it with you!
- 1 1/4 cups self-raising flour
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs
- 3/4 cup sugar
- 1 1/2 teaspoons vanilla extract/essence
- 1/2 cup oil (canola, vegetable etc.)
- 1/2 cup of buttermilk (if you don’t have buttermilk you can mix 1/2 cup of milk with 1/2 teaspoon of lemon juice)
-Preheat oven to 160* Celsius fan-forced.
-In a medium sized bowl, mix flour, baking powder and salt together with a whisk.
-In another bowl, add eggs and beat with electric beaters for 10-20 seconds. Add the sugar and continue to beat on medium speed for about 30 seconds. Add vanilla and oil, beat.
-Reduce the speed to low, and add about half of the flour mixture. Add half the buttermilk, and then the rest of the flour and the rest of the butter milk.
-The mixture will be reasonably thin. Pour into a prepared muffin or cupcake tin, fill about 2/3 of the way.
-Bake in the oven for 12-17 minutes.
-Cool the cakes in a wire rack until completely chilled, you can then ice the cakes if you wish. I iced them with a cream cheese icing:)
